  Breakfast Recipes

*French Toast Bake

12 slices day old French Bread, 1" thick

2 1/2 c. milk

5-6 eggs

1 c. brown sugar

1 tsp. vanilla

1/2 tsp. nutmeg

1 c. chopped pecans

1/4 c. butter, melted

-Arrange bread in greased 9"x13" baking dish

-In bowl, combine eggs, milk, 3/4 c. brown sugar, vanilla, nutmeg, pour over bread. Cover and

refrigerate 8 hours or overnight.

-Remove 30 minutes before baking. Sprinkle pecans over dish.

-Combine melted butter and 1/4 sugar and drizzle over top.

-Bake uncovered in a 350° oven for 35 minutes or until knife comes out clean.

Breakfast Casserole

1# Bob Evans Sage sausage, browned

1 cup shredded cheddar cheese

4 slices bread, broken into small pieces

6 eggs

2 c. milk

salt and pepper to taste

Preheat oven to 350 degrees.  Spray a 9 x 13 pan with cooking spray. Layer bread pieces, sausage crumbles and cheese.  Mix eggs, milk and seasonings in a bowl. Pour over sausage layers.  Bake for 35-40 minutes or until set.

Monkey Bread

3 tubes biscuits

Sugar, cinnamon (mix to taste--about 1 cup sugar and 1/4 c. cinnamon)

1 c. brown sugar

1 stick margarine

Preheat oven to 350 degrees. Cut biscuits into quarters. Roll in the sugar/cinnamon mixture.  Drop into a greased bundt pan (or tube pan). Melt margarine in small saucepan. Add brown sugar. Bring to a boil and boil 1 minute. Pour over biscuits. Bake for 30 minutes. Remove from oven and immediately turn over onto a plate. Serve warm--yum!

RETREAT recipe

Quiche Lorraine

1/2 lb. bacon, fried til crisp

4 oz. shredded Swiss cheese

1/2 small onion, chopped

4 eggs

2 cups milk

1 cup Bisquick

1/4 tsp. salt, 1/8 tsp. pepper

Preheat oven to 400 degrees. Spray a 10 inch pie pan with cooking spray. Layer bacon, cheese and onion.  In blender, mix remainder of ingredients. Blend on high for 5 seconds. pour over bacon mixture. Cook for 30 minutes or until knife inserted in center comes out clean.

Retreat recipe

Fruit Slush

3 c. water, boil to dissolve:

2 c. sugar

Cool and add:

6 oz. orange juice concentrate

3 cans water

2 mashed bananas

20 oz. crushed pineapple, undrained

Freeze, makes (24) 5 oz. cups

RETREAT recipe

Omelette's In A Bag...It Really Works!!

Breakfast in a bag! (Not doughnuts either!)  Have you ever heard of this?  This works great!  Good for when all your family is together and no one
has to wait for their special omelet!!

Have guests write their name on a quart-size freezer bag with permanent marker.
  • Crack 2 eggs..large or extra-large, into the bag (not more than 2) shake to combine them.
  • Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.
  • Each guest adds prepared ingredients of choice to their bag and shake.
  • Make sure to get the air out of the bag and zip it up.
  • Place bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of
    boiling water.
  • Open the bags and the omelet will roll out easily.
 
Be prepared for everyone to be amazed.
Nice to serve with fresh fruit and coffee cake: everyone gets involved in the process and a great conversation piece!!
