  Salad Recipes

*Chicken Pasta Salad with Grapes

This has become a new summer favorite!

1/2 lb. box of small shell pasta, cooked and drained

3 chicken breasts, cooked and diced

3 celery stalks, diced

3# red seedless grapes

Dressing:

1 cup Miracle Whip

1/2  tsp. curry powder

1/4  tsp. cumin powder

2 TBSP. balsamic vinegar, or rice vinegar

4 TBSP. sugar

salt and white pepper to taste

Mix the pasta, chicken, celery and grapes in a large bowl. 

In a separate bowl, mix the dressing ingredients. Pour over

the pasta mixture and mix well. Refrigerate at least 4 hours before serving.

You can vary the amounts of spices, etc. to your taste. I like my salads a little more

creamy, so I make more dressing than the original recipe. Adjust for your taste.

Carolina Macaroni Salad

1 pkg. Kraft Macaroni & Cheese dinner, prepared as directed

Add: 1/2 cup mayonnaise

pickle relish to taste

3 hard cooked eggs, chopped

1 small green pepper, chopped

1 small onion, chopped

pepper to taste

Mix all together and cover. Refrigerate several hours.

RETREAT recipe

Vegetable Salad

1 can white corn

1 can french cut green beans

1 can young small peas

1 small jar chopped pimento

1 cup celery, chopped

1 green pepper, chopped

1 small red onion, chopped

Drain juice from vegetables

In small bowl, mix 1/2 c. sugar

1/2 c. vinegar

1/2 c. oil

1 tsp. salt

1 tsp. pepper

Mix thoroughly and pour over vegetables. Best if marinated 24 hours. Keeps a long time (if certain husbands aren't around!)

RETREAT recipe

Jello Salad

1 3 oz. pkg. lemon jello

2 cups hot water

Mix thoroughly until jello dissolves. When syrupy, add 1 can drained pineapple chunks (save juice), 1 cup mini marshmallows, and 2-3 bananas, sliced. Let set.

Take reserved pineapple juice and add water to total 1 cup. Put in small saucepan and add: 1/2 c. sugar, 2 TBSP. flour, 1 egg and 2 TBSP. butter. Cook  until thick, then cool.  Make 1 package Dream Whip topping, fold together with pineapple mixture and put on top of jello. Sprinkle grated Parmesan cheese on top.
