*Chicken
Pasta Salad with Grapes
This has become a new summer
favorite!
1/2 lb. box of small shell pasta,
cooked and drained
3 chicken breasts, cooked and diced
3 celery stalks, diced
3# red seedless grapes
Dressing:
1 cup Miracle Whip
1/2 tsp. curry powder
1/4 tsp. cumin powder
2 TBSP. balsamic vinegar, or rice
vinegar
4 TBSP. sugar
salt and white pepper to taste
Mix the pasta, chicken, celery and
grapes in a large bowl.
In a separate bowl, mix the
dressing ingredients. Pour over
the pasta mixture and mix well.
Refrigerate at least 4 hours before serving.
You can vary the amounts of spices,
etc. to your taste. I like my salads a little more
creamy, so I make more dressing
than the original recipe. Adjust for your taste. |
